Madhura Kizhangu (Sweet Potato) Ularthiyathu
"Madhura Kizhangu Ularthiyathu" - Another recipe from my mothers' kitchen which is best when served with a hot cup of black tea on a rainy evening . Normally I've seen dishes of sweet potatoes either as steam boiled or baked ones. But this one I've seen only made by my mother. This recipe has all its flavors such as salty , spicy and a bit of sweetness from the sweet potatoes and is a best evening snack which satisfies your appetite on a hungry evening. Please remember to use ample amount of pearl onions (kunjulli), fresh curry leaves and virgin coconut oil which gives the distinct flavor to this dish.
Ingredients
- Sweet Potato - 2 medium
- Pearl Onion - 1 cup sliced
- Onion - 1/2 cup chopped
- Green Chili - 1+2
- Turmeric powder - 1/4 tsp + 1/4 tsp
- Salt - To taste
- Red Chili powder - 1/2tsp + 1 tsp
- Water - 2 cup
- Mustard seeds - 1tsp
- Dried Red chili - 2
- Curry leaves - few
- Coconut oil - 2.5 tbsp
Method
- Wash and clean the peel of sweet potato and cut into medium sized cubes. Soak in water for 5 minutes and wash well 3 or 4 times in plain running water.
- Add the cleaned cubed sweet potato with 2 cups water, salt 1/4 tsp turmeric powder, 1/2 tsp red chilli powder and 1 slit green chilli to a heavy bottomed vessel. Cover and cook till they are cooked but not mushy.
- Once done, drain the excess water and transfer to a bowl.
- Meanwhile in a kadai, add coconut oil. Splutter mustard seeds, dried red chilli and curry leaves.
- Add chopped onions, pearl onion, chopped green chilli with a pinch of salt and sauté till onion becomes golden brown.
- Add 1/4 tsp turmeric powder and 1 tsp red chilli powder.
- Now add cooked sweet potato and sauté in low flame for 5-8 minutes. Once the onion is well coated in sweet potato, add 1 tsp coconut oil and fresh curry leaves. Transfer to a plate
- Serve hot with a cup of black tea/ coffee.
Notes
- If you are using pressure cooker to cook sweet potatoes , be careful as they tend to get mushy after 1 or 2 whistles which wont give the desired results for this dish.
- Adding fresh curry leaves, pearl onion and coconut oil is the highlight of this dish.
