Veg Pulao/Pulav

 


Ingredients
  • Basmati rice - 1 cup
  • Boiling Water - 6 cups
  • Onion -1 /2 cup (Finely sliced)
  • Carrots - 1/4 cup (sliced)
  • Beans  -1/4 cup (sliced)
  • Pineapple cubes - 1/4 cup (optional)
  • Coriander leaves - 1 tbsp (chopped)
  • Green chill - 1 slit into two
  • Cardamom - 3
  • Bay Leaf - 1
  • Cinnamon - 1 small piece
  • Oil/Ghee - 4 tbsp
  • Lemon juice - 1 tsp
  • Salt - as needed

Method
  1. Heat a pan .Add ghee and fry cashews and raisins. Drain and keep aside.
  2. Fry onions till golden brown and drain in a paper towel and keep aside.
  3. Soak  rice in water for half an hour and drain .
  4. Boil water with cloves, cardamom, bay leaf, cinnamon and 1 tsp oil and lemon juice.(this prevents the rice from sticking each other).
  5. Cook rice with enough salt by adding the above boiling water .
  6. When rice is 3/4 th done add carrots and beans and cook till almost done.
  7. Drain the excess water and keep in a strainer.
  8. In another pan add 1 tsp ghee. Layer cooked rice and veggies follower by fried nuts and cashews and fried onions in 2 or 3 layers.
  9. Add 1 tsp ghee on top. Garnish with coriander leaves.
  10. Cover with an aluminum foil and bake in a preheated oven at 350 for 15 minutes.
  11. Once done, gently fluff up the rice.
  12. Serve with any veg or non veg curries.

Notes
  1. To prevent rice from sticking to each other, add  1 tsp oil and lemon juice while cooking rice.
  2. You can also bake the rice in heated tawa .Place the vessel covered with aluminum foil in a heated tawa in low flame. Keep for about 20  minutes
