Sweet Corn Chicken Soup
Ingredients
- Chicken Breast - 1 big piece (cooked and shredded)
- Sweet Corn - 1 can
- chicken broth - 5 cups
- White onion - 2 tbsp
- Carrot - 2 tbsp chopped (optional)
- Green Beans - 2 tbsp chopped (optional)
- Green Onions- 2
- Ginger Garlic - 1 tbsp chopped
- Soy sauce - 1 tsp
- White vinegar - 1 tsp
- Salt -to taste
- Pepper powder - 1 tsp
- Corn starch - 1.5 tbsp
- Egg white - 2
- Sugar - 1 pinch
- Butter - 1 tbsp
- Water - 3 tbsp
Method
- In a medium sized sauce pan, heat butter.
- Once the butter starts melting add freshly chopped ginger , garlic and whites of green onions.
- When they starts wilting add chopped onions till translucent.
- Now add chopped carrots, green beans and saute for 2 mins
- Add chicken broth and sweet corn and bring to boil
- Add Shredded chicken pieces, soy sauce, vinegar, pepper and salt and sugar.
- Cover and cook for 5-8 mins.
- Beat egg whites with a fork and pour to the soup while continuously stirring with a spatula so as to create ribbons of egg white in soup
- Add cornflour to 3 tbsp of water and pour to the hot boiling soup stirring continuously in low flame so that the soup gets thickened up and immediately switch off flame.
- Add any extra seasonings to taste and freshly chopped green onions.
- Serve hot.
Notes
- Adding chopped beans and carrots is optional.I personally like it so I have added them in my soup.
- Add the quantity of salt , sugar, vinegar and pepper powder to ones taste as you wish the soup to be sweet, salty or tangy.
