Sweet Corn Chicken Soup



Ingredients
  1. Chicken Breast - 1 big piece (cooked and shredded)
  2. Sweet Corn - 1 can
  3. chicken broth - 5 cups
  4. White onion - 2 tbsp
  5. Carrot - 2 tbsp chopped (optional)
  6. Green Beans - 2 tbsp chopped (optional)
  7. Green Onions- 2
  8. Ginger Garlic - 1 tbsp chopped
  9. Soy sauce - 1 tsp
  10. White vinegar - 1 tsp
  11. Salt -to taste
  12. Pepper powder - 1 tsp
  13. Corn starch - 1.5 tbsp
  14. Egg white - 2 
  15. Sugar - 1 pinch
  16. Butter - 1 tbsp
  17. Water - 3 tbsp



Method
  1. In a medium sized sauce pan, heat butter.
  2. Once the butter starts melting add  freshly chopped ginger , garlic and whites of green onions.
  3. When they starts wilting add chopped onions till translucent.
  4. Now add chopped carrots, green beans  and saute for 2 mins
  5. Add chicken broth and sweet corn  and bring to boil
  6. Add Shredded chicken pieces, soy sauce, vinegar, pepper and salt and sugar.
  7. Cover and cook for 5-8 mins.
  8. Beat egg whites with a fork and pour to the soup  while continuously stirring with a spatula so as to create ribbons of egg white in soup
  9. Add cornflour to 3 tbsp of water and pour to the hot boiling soup stirring continuously in low flame so that the soup gets thickened up and immediately switch off flame.
  10. Add any extra seasonings to taste and freshly chopped green onions.
  11. Serve hot.

Notes
  • Adding chopped beans and carrots is optional.I personally like it so I have added them in  my soup.
  • Add the quantity of salt , sugar, vinegar and pepper powder to ones taste as you wish the soup to be sweet, salty or tangy.
