Jangiri / Jalebi / Imarti
Jangiri/Jalebi is a popular North Indian sweet snack made from urad dal. It is also known as Imarti. This is one of a snack made during festive seasons especially during Diwali time. Urad dal is soaked in water and grind to a smooth paste.They are piped into hot oil/ ghee and fried till crispy and transferred to a hot sugar syrup which is mildly flavored with any rose essence/ saffron / cardamom powder
Ingredients
For jangiri
- Urad dal - 1/2 cup
- Water - about - 1/4 cu[
- Salt - 1 pinch
- Orange red food color - 2 drops
- Oil/ ghee - for deep frying
For sugar syrup
- Sugar - 1.5 cup
- Water - 2 cup
- Lemon juice - 1 tbsp
- Saffron/Cardamom powder/ rose essence - 1 pinch/ 1 tsp
- Orange red food color - 1 drop
Method
- Clean and wash urad dal well.
- Soak urad dal in water for 3-4 hrs.
- Drain and transfer to a wet grinder .
- Add water little by little and grind to a smooth thick paste,
- Transfer to a bowl and add salt and red color.
- Transfer the paste to a piping bag and make a small hole at the tip.
- In another pan make sugar syrup by adding sugar to water.
- When it gets completely melted add lemon juice, red food color and any flavoring agent of your choice and keep it warm.
- In a wide bottomed pan add oil / ghee for frying.
- Heat on medium flame.
- Draw 2-3 medium circles with the batter from piping bag and draw small spirals on top it.
- Fry till both sides are cooked and crispy but still remain in orange color (should not be browned)
- Transfer the fried jangiris to sugar syrup and soak for about 1-2 mins till sugar syrup is well coated in the jangiris.
- Transfer to a plate and serve after 1 hr.
Notes
- You can also add 1 tbsp rice flour if you wish jangiris to be little crispy.
- You can fry jangiris in oil/ ghee/ a mixture of both.
- Practice drawing the jangiri on a plate before directly drawing on oil for better results.
- Use a fluffier batter to get jangiris which will soak sugar syrup well.for this gring the urad dal really well and when u put a drop in a galss of water it should float.
- Make very small hole on the piping bag tip and then increase the size if needed.
