Mathanga Thoran (Pumpkin stir fry)




Ingredients
  1. Pumpkin( (cut into small cubes)- 1.5  cup
  2. Pearl Onion - 3 nos (sliced)
  3. Green chilli -1
  4. Curry Leaves
  5. Mustard seeds-1/2 tsp
  6. Split urad dal - 1 tsp
  7. Red Chilli  - 1
  8. Turmeric Powder - 1/4 tsp
  9. Oil-  2 tsp
  10. Salt - To taste
  11. Water

To Grind (Coarse)
  1. Coconut - 1/4 cup
  2. Pearl Onion - 2 nos
  3. Jeera (Cumin) -1 pinch
  4. Salt - 1 pinch
  5. Turmeric Powder - 1 pinch

Method
  1. Cook the cubed pumpkin with salt, green chilli and turmeric powder with very little water.
  2. In a pan add oil. Splutter mustard seeds, urad dal ,dried red chilli and curry leaves.
  3. Add sliced onions little salt and saute until translucent.
  4. Add cooked pumpkin cubes and give a nice stir.
  5. Add grounded coconut mixture and saute for 2 mins
  6. Serve hot with rice.

Notes
  • Add very little water to cook the pumpkin else it may get mushy.
