Mathanga Thoran (Pumpkin stir fry)
Ingredients
- Pumpkin( (cut into small cubes)- 1.5 cup
- Pearl Onion - 3 nos (sliced)
- Green chilli -1
- Curry Leaves
- Mustard seeds-1/2 tsp
- Split urad dal - 1 tsp
- Red Chilli - 1
- Turmeric Powder - 1/4 tsp
- Oil- 2 tsp
- Salt - To taste
- Water
To Grind (Coarse)
- Coconut - 1/4 cup
- Pearl Onion - 2 nos
- Jeera (Cumin) -1 pinch
- Salt - 1 pinch
- Turmeric Powder - 1 pinch
Method
- Cook the cubed pumpkin with salt, green chilli and turmeric powder with very little water.
- In a pan add oil. Splutter mustard seeds, urad dal ,dried red chilli and curry leaves.
- Add sliced onions little salt and saute until translucent.
- Add cooked pumpkin cubes and give a nice stir.
- Add grounded coconut mixture and saute for 2 mins
- Serve hot with rice.
Notes
- Add very little water to cook the pumpkin else it may get mushy.
