Oats Upma
" Oats Upma "- A quick and healthy breakfast made with oats ,veggies and a bit of Indian spices.It is a quick and easy breakfast (hardly takes 10 mins to cook) which when served with a cup of tea keeps you satiated till lunch. So if you are looking for a healthy breakfast in no time, you can try this.
Ingredients
- Oats -1.5 cup (preferably Quick Oats)
- Water- 1/4 cup - 1/2 cup
- Coconut (grated)- 1/4 cup
- Green chilli- 2 (chopped)
- Grated Carrot - 2 tbsp
- Beans -2 tbsp Chopped
- Onion - 1/4 cup chopped
- Ginger - 1 tsp (chopped)
- Turmeric Powder - a pinch (optional)
- Salt - To taste
- Oil - 1 tbsp
- Mustard Seeds- 1 tsp
- Jeera - 1/4 tsp
- Split urad dal - 1 tsp
- Roasted Peanuts - 3 tbsp
- Hing - a pinch
- Curry Leaves - few
Method
- In a heated pan dry oats for 3-4 mins till a nice aroma comees and transfer to a bowl
- Heat a kadai. Add 1 tsp oil and splutter mustard seeds,jeera and split urad dal.
- Add chopped ginger, green chilli,hing, turmeric powder and curry leaves and saute for 1 min.It should not be brown.
- Add chopped onions and saute till it turns transulcent followed by chopped beans.
- Add roasted oats and saute for 2 mins.
- Sprinkle water and add salt as needed
- Cover with a lid and cook for 2-3 mins.
- Add grated carrots and some more frsh curry leves and grated coconut and mix well.
- Add roatsed peanuts and give a nice stir.
- Serve hot with a cup of tea.
Notes
- I have used quick oats in this recipie. you can used rolled oats or steel cut oats . But the cooking time and amount of water required varies.
- Adding peanuts (or cashews) gives a nice crunch to the upma.
- Dont add too much water.Sprinkle little by little and see how it is absorbed else it will turn soggy.
- You can also add any other veggies of your choice
