Dates Pickle









Ingredients

  • Dates - 15 
  • Ginger - 1tbsp sliced
  • Garlic - 1tbsp sliced
  • Green chilli- 3 chopped
  • Curry leaves - few
  • Red Chilli powder - 2 tbsp
  • Fenugreek Powder (uluva podi )  - 1 tsp
  • Mustard seeds- 1tsp
  • Fenugreek  seeds - 1tsp
  • Asafoetida powder - 1 tsp
  • Jaggery - 1tbsp
  • Tamarind- 1 gooseberry size soaked in 1 cup water 
  • Gingely Oil - 2 tbsp
  • Salt - To taste


Method
----------
  1. Chop dates to small pieces
  2. In a heated pan add oil. splutter mustard seeds, fenugreek seeds and asafoetida.
  3. Soak tamarind in 1 cup hot water.Drain and keep aside.
  4. Add  chopped ginger, garlic ,ginger, green chilli and curry leaves till golden brown.
  5. Reduce heat to minimum and add red chilli powder.
  6. Add water and  mix till it becomes a thick sauce.
  7. Add chooped dates and lemon and cover and cook till dates are soft.
  8. Add  jaggery, vinegar and mix well.
  9. Add fenugreek powder,asafoetida and mix well.
