Mathanga Vanpayar Erisheri (Pumpkin and Red bean Erisheri )




Ingredients

  • Pumpkin (cut into small cubes)- 1 cup
  • Green chilli -2
  • Curry Leaves
  • Turmeric Powder - 1/2 tsp
  • Red chilli Powder - 1/4 tsp
  • Water - 11/2 cup
  • Salt - To taste
  • Cooked red beans - 1/2 cup


To Grind (Coarse)

  • Coconut - 1/2 cup
  • Pearl Onion-2 nos
  • Jeera (Cumin) -1 pinch
  • Peppercorns - 5 nos
  • Green Chilly - 1
  • Salt - 1 pinch
To dry roast and temper
----------------------------------
  • Mustard seeds-1/2 tsp
  • Red Chilli  - 2
  • Coconut  3 tbsp
  • Curry Leaves -few
  • Oil- 1tbsp

Method
------------
  1. Cook the cubed pumpkin with salt, green chilli ,chilli and turmeric powder.
  2. Once cooked , mash it well and add  cooked red bean and give a mix.
  3. Grind  ingredients given in "To Grind " section to a smooth paste.
  4. Add grounded coconut mixture  to the cooked pumpkin and red bean  and boil for 3  mins.
  5. In a pan add oil. Splutter mustard seeds,red chilli and curry leaves.
  6. Add 3 tbsp coconut and fry till dark brown.
  7. Add this on top of cooked mixture and mix well before serving.
  8. Serve hot with rice.
