Lemon and Dates Pickle






Ingredients
  • Dates - 15 
  • Lemon - 1/2 cup (salted and sliced to small pieces)
  • ginger - 1tbsp chopped
  • Garlic - 1tbsp chopped
  • Green chilli- 3 chopped
  • Curry leaves - few
  • Ginger garlic paste 1tsp
  • Red Chilli powder - 2.5 tbsp
  • Fenugreek Powder (uluva podi )  - 1 tsp
  • Mustard seeds- 1tsp
  • Fenugreek  seeds - 1tsp
  • Asafoetida powder - 1 tsp
  • Jaggery - 1tbsp
  • Vinegar - 1/4 cup
  • Gingely Oil - 2 tbsp
  • Water - 1.5 cup
  • Salt - To taste


Method
----------
  1. Chop dates to small pieces.
  2. In a heated pan add oil. splutter mustard seeds, fenugreek seeds and asafoetida.
  3. Add  chopped ginger, garlic ,ginger, garlic paste, green chilli and curry leaves till golden brown.
  4. Reduce heat to minimum and add red chilli powder.
  5. Add water and  mix till it becomes a thick sauce.
  6. Add chooped dates and lemon and cover and cook till dates are soft.
  7. Add  jaggery, vinegar and mix well.
  8. Sprinkle fenugreek powder,asafoetida and mix well.
