Egg Potato Masala Curry






Ingredients

  • Egg- 4
  • Cardamom pods -  2
  • Onion -1  (thinly sliced to small pieces)
  • Pearl onion - 5 nos
  • Green chilli -2 chopped
  • Tomato - 1/4 cup (chopped)
  • Potato - 1(diced)
  • Curry Leaves - 1 spring
  • Ginger - 1 small piece (crushed)
  • Garlic - 3 cloves(crushed)
  • Turmeric Powder -1/2 tsp
  • Coriander Powder -1 tbsp
  • Meat Masala - 1 tsp
  • Red chilli powder - 1/2 tsp
  • Garam masala Powder - 1/4 tsp
  • Thick coconut milk  - 1/2 cup
  • Mustard seeds- 1 sp
  • Water - 1 cup
  • Oil - 2 tbsp
  • Salt - to taste
To splutter

  • Mustard seeds -1 tsp
  • Dried Red chilli -3
  • Curry leaves - few
  • Chilli Powder -1 pinch

Method

  1. In a heated pan add oil. and splutter cardomom. 
  2. Add crushed  ginger and garlic and saute till a nice aroma comes.
  3. Add sliced onion,pearl onions,, green chilli and curry leaves  saute till onion becomes brown 
  4. Add salt, coriander , turmeric ,meat masala, chilli powders  and mix well.
  5. Add tomatoes and saute well adding little water till oil starts oozing from masala.
  6. Add diced potatoes and mix well.
  7. Add 1 cup water . Cover and cook till potato is fully cooked thick.
  8. Now reduce flame  to low  and add thick coconut milk and switch of the flame
  9. Add hard boiled eggs.
  10. Splutter the ingredients given in "to splutter" and pour over curry.
  11. Goes well with  puttu,appam, bread ,chapati,idiyappam and palappam.
