Erachi Puttu (Meat Puttu)
" Puttu " is a common breakfast item of Malayali. " Erachi Puttu " is a combination of normal kerala puttu layered with a masala made of meat. This recipe is made using beef masala. A lot of variations can be made in tgis recipe by adding the msalas of your choice. This can be made either in a "puttu kutti" or "chiratta puttu maker" adding as many layers of masala as you like .In this recipe i have used "chiratta puttu maker" and a single layer of masala .
Ingredients for Puttu
- Rice Flour (puttu podi) - 1.5 cup
- Grated coconut - 3/4 cup
- Salt - as needed
- Water - as needed
- Beef - 1 cup (cut to small pieces)
- Vinegar - 1 tsp
- Onion - 1/2 cup finely chopped
- Pearl onion -1/2 cup (finely chopped)
- Sliced coconut (thenga kothu) - few
- Green chilli - 2 chopped
- Ginger garlic paste 1 tsp
- Turmeric Powder - 1/2 tsp
- Red chilli powder - 1 tsp
- Coriander powder - 1 tsp
- Garam masala powder- 1/4 tsp
- Pepper Powder - 1/2 tsp
- Mustard seeds - 1/2 tsp
- Curry leaves
- Red chilli -1
- Salt as needed
- Water as needed
- Oil - 2tbsp
Method
For Making Beef masala
- Marinate beef with salt , vinegar, turmeric and pepper powder and keep aside for 30 mins.
- Pressure cook adding little water until done.
- Heat a kadai add oil.
- Splutter mustard seeds, curry leaves and red chilli.
- Add ginger garlic paste and saute till a nice aroma comes.
- Add chopped onion and pearl onion till slightly brown.
- Add thengakothu and saute for a minute.
- Now add all masala powders and saute well adding little water.
- Add cooked beef along with the stock and cover and cook till the gravy thickens.
- Switch of and allow to cool.
Method for making Erachi Puttu
- Take 1/4 cup grated coconut and mix well with rice flour.
- Add salt in water and sprinkle over the above mixture till you reach the consistency of normal puttu (when you hold the mixture in your hand it should not loose its shape that is the right consistency) .Now the puttu mixture is ready
- Take a puttu maker(i used chiratta puttu maker).Add a layer of grated coconut , then puttu mixture , then layer with beef masala, again a layer of coconut, puttu mixture and top it with a layer of grated coconut.
- You can make 1 or more layers of beef masala as you wish.
- Fill a pressure cooker or puttu kudam with water
- Place the filled chiratta puttu maker when the steam comes out.
- Cover and cook for about 5 mins (till steam starts appearing from the puttu maker nozzle)
- Once done open the lid and flip it on a plate.
- Serve hot with pappadam and black coffee or tea.
