Indian Style Veggie Pasta




Ingredients

  • Pasta - 1 1/2 cup
  • Carrot  - 1/4 cup (Small cubes)
  • Beans - 1/4 cup(chopped)
  • Cooked Peas - 1/4 cup
  • Onion - 1/4 cup (chopped)
  • Tomatoes - 1/2 cup (chopped)
  • Capsicum - 2 tbsp
  • Coriander Leaves - 1/4 cup chopped
  • Curry Leaves - few
  • Green Chilli - 1 chopped
  • Turmeric Powder - 1/4 tsp
  • Red Chilli Powder - 1/2 tsp
  • Coriander Powder - 1/2 tsp
  • Lemon Juice - 1/2 tsp
  • Mustard Seeds - 1 tbsp
  • Ginger Garlic Paste - 1/2 tsp
  • Jeera/Cumin - 1 pinch
  • Salt
  • Butter - 1tsp
  • Water
  • Olive Oil - 2 tbsp



Method

  1. Boil Pasta with enough water and salt till done. Drain and keep aside.
  2. In a wok add olive oil. Splutter mustard seeds and cumin seeds followed by curry leaves.
  3. Add chopped onions and saute till wilted.
  4. Add ginger garlic paste and saute again.
  5. Add carrots, beans ,capsicum and peas and saute again.(any veggies of your choice)
  6. Add tomatoes and saute till they become mushy.
  7. Add chilly, coriander, turmeric powder and saute again.
  8. Add 1/4 cup water if needed and make a thick gravy.
  9. Add cooked pasta and mix gently and switch off the flame.
  10. Lastly add freshly chopped coriander leaves, lemon juice and butter and mix gently.
  11. Serve hot.
