Carrot Pickle





Ingredients

  • Carrot  - 2 big
  • Slit green Chilli  - 2
  • Chopped Ginger -1 tbsp
  • Chopped Garlic- 1 tbsp
  • Curry Leaves - few
  • Red Chilli powder - 3 tbsp
  • Turmeric Powder - 1/4 tsp
  • Mustard seeds - 1 tsp
  • Fenugreek seeds - 1/3 tsp
  • Fenugreek Powder (uluva podi )  - 1/4 tsp
  • Asafoetida - 1 tsp
  • Vinegar - 1 tbsp
  • Gingely Oil - 2 tbsp
  • Water - 2/3  cup
  • Salt - To taste

Method
---------
  1. Cut carrot to 2 inch long thin  pieces.
  2. Marinate with 1/2 tsp salt , fenugreek powder and keep aside for 20 minutes
  3. In a heated pan add oil.
  4. Splutter mustard and fenugreek seeds
  5. Saute ginger,garlic,chilli, curry leaves
  6. Reduce heat to minimum and add red chilli powder,turmeric powder and saute for 2 mins.
  7. Add water and salt and bring to boil
  8. Add vinegar ,carrot , fenugreek powder and asafoetida .
  9. Close and cook for 2 mins and switch off flame
  10. Keep in the pan for 5 more mins.
