Ghee Rice (Neychoru)
Ingredients

- Basmati rice -1 cup
- Boiling Water -2 cups
- Ghee - 3 tbsp
- Onions -1(sliced thin)
- Cashew
- Raisins
- Salt
Whole Spices
-------------------
- Green cardamom - 3
- Black cardamom - 1
- Cinnamon stick - 1
- Star anise (Thakkolam) - 1
- Cloves - 4
- Bay Leaves -1
Method
----------------
- Soak rice in water for half an hour and drain .
- Heat 3 tbsp ghee in a pan and fry half of the onions till dark brown and keep aside .(You can add a pinch of sugar to caramelise the onions easily)
- Fry the nuts and raisins and keep aside.
- To the pan add whole spices and saute for a while .Then add half of finely sliced onions and saute till it becomes light brown .
- Add 1/4 tsp ginger garlic paste and saute till raw smell disappears.
- .Now add the drained rice and saute till the crackling sound stops(about 5 mins)
- Meanwhile boil water in another pan with salt.
- Add boiled water to the rice.Close lid.Heat in high flame for 5 mins and then in med to low till the rice is done
- Garnish with fried onions, nuts and raisins
