Pink Vegetable Korma
An easy , healthy korma loaded with veggies and a vibrant pink color that can be prepared in minutes . Tastes best when paired with chapati, appam, bread.
Ingredients
- Veggies (Beetroot, beans, carrot, potato) - 2 cup (cubed)
- Onion - 1/2 ( thinly sliced)
- Green Chilly - 4 (slit into 2)
- Curry Leaves - few
- Thick coconut milk - 1/2 cup
- Water - 1 cup
- Pepper powder - 1/4 tsp
- Coconut Oil - 1 tsp
- Salt - to taste
Method
- In a pressure cooker add cubed veggies, sliced onion, green chilly, curry leaves ,water, salt and cook for 2 whistles.
- When pressure is released, open lid and gently mash half of the potatoes. The other half and veggies should remain cubed.
- Add extra boiling water if needed to loosen the gravy.
- Now reduce flame to low and add thick coconut milk. Switch off and keep aside.
- Pour 1tsp coconut oil, few curry leaves and some freshly ground pepper powder.
- Tastes best with chapati, appam, bread.
