Pink Vegetable Korma

  


          An easy , healthy korma loaded with veggies and a vibrant pink color that can be prepared in minutes . Tastes best when paired with chapati,  appam, bread.


Ingredients
  • Veggies (Beetroot, beans, carrot, potato) - 2 cup (cubed)
  • Onion - 1/2 ( thinly sliced)
  • Green Chilly - 4 (slit into 2)
  • Curry Leaves - few
  • Thick coconut milk  - 1/2 cup
  • Water - 1 cup
  • Pepper powder - 1/4 tsp
  • Coconut Oil - 1 tsp
  • Salt - to taste


Method
  1. In a pressure cooker add cubed veggies, sliced onion, green chilly, curry leaves ,water, salt and cook for 2 whistles.
  2. When pressure is released, open lid and gently mash  half of the potatoes. The other half   and veggies should remain cubed. 
  3. Add extra boiling water if needed to loosen the gravy.
  4. Now reduce flame to low  and add thick coconut milk. Switch off and keep aside.
  5. Pour  1tsp coconut oil, few  curry leaves and some freshly ground pepper powder.
  6. Tastes best with chapati,  appam, bread.
