Mixed Stir Fry Rice

 



     An easy quick fix  rice  bowl recipe with a combination of assorted veggies, meat, eggs and prawns that can be prepared in few minutes but also  satiates your appetite .  This recipe was made as an inspiration from the Mongolian cuisine. The peculiarity of this recipe is that you can play with the flavors by adding a variety of sauces, veggies and sea food or meat as per your choice. Also the rice can be substituted with pasta, noodles, tortilla or even brown rice.




Ingredients
  • Cooked white rice - 2 cup
  • Chicken - 100 gm
  • Prawns - 100 gm
  • Egg - 2
  • White Onion - 1 cup (sliced)
  • Beans - 1 cup (sliced) Bell pepper (assorted colors) - 1cup
  • Carrot - 1 (sliced)
  • Broccoli - 1/4 cup
  • Celery chopped - 2 tbsp
  • Spring onion - 1 tbsp chopped
  • Garlic chopped - 1 tsp
  • Red Chilli Flakes - 1/2 tsp
  • Soy sauce - 1 tbsp
  • Teriyaki sauce - 1tsp
  • Madras Curry Powder - 1/2 tsp
  • Sweet and sour chilli sauce  - 1 tsp
  • Pepper powder - 1tsp 9fresh and coarsely crushed)
  • Coriander leaves  - for garnishing
  • Honey - 1 tsp
  • Salt - To taste
  • Olive oil - 3 tbsp


To marinate chicken
  • Garlic chopped - 1/4 tsp
  • Pepper Powder - 1 tsp
  • Salt - as needed
  • Oregano- a pinch


To Marinate Prawns
  • Ginger  garlic Paste - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Red Chilli powder - 1 tbsp
  • Pepper Powder - 1/2 tsp
  • Salt -to taste
  • Lemon juice - 1 tsp
  • Garam masala Powder - 1 pinch
  • Coconut milk - 1 tbsp


Method
  1. Beat egg with salt and set aside to make scrambled eggs.
  2. Marinate chicken and prawns with l the given ingredients and set aside.
  3. In a  heated wok/ kadai add  1tbsp olive oil . Scramble 2 eggs with little salt and keep aside.
  4. To the same pan, add 1tbsp  add marinated chicken  and grill them, followed by  marinated prawns in the pan until done and keep aside.
  5. Add oil if needed.
  6. Saute the chopped garlic, celery and spring onion.
  7. When a nice aroma comes add sliced white onions and saute till it becomes translucent.
  8. Add  sliced beans, carrot, broccoli, bell peppers and  sauté till they are half done. They should not be overcooked.
  9. Add soy sauce, sweet chilli, teriyaki sauce, honey, vinegar, red chilli flakes, madras curry powder salt and pepper powder.
  10. Add grilled chicken pieces, prawns and and mix well.
  11. Add cooked rice and mix gently
  12. Add scrambled eggs and coriander leaves and give a quick stir.
  13. Garnish with coriander leaves, celery, spring onions.
