Easy Potato Stew
An easy , healthy potato stew that can be prepared in minutes which makes best combination when paired with bread or palappam .
Ingredients
- Potato - 1 Cubed
- Onion - 1/2 ( thinly sliced)
- Green Chilly - 4 (slit into 2)
- Curry Leaves - few
- Ginger - 1 tsp (chopped)
- Curry leaves - few
- Thin coconut milk - 1 cup
- Thick coconut milk - 1/2 cup
- Water - 1 cup
- Coconut Oil - 1 tsp
- Salt - to taste
Method
- In a pressure cooker add potato, sliced onion, green chilly, ginger, curry leaves ,water, salt and cook for 1 whistle.
- When pressure is released, open lid and gently mash half of the potatoes. The other half should remain cubed.
- Add thin coconut milk and bring to boil.
- Now reduce flame to low and add thick coconut milk. Switch off and keep aside.
- Pour 1tsp coconut oil, few curry leaves and some freshly chopped ginger juliennes over the curry.
- Tastes best with palappam ,appam, bread.
