Easy Potato Stew

 

          An easy , healthy potato stew that can be prepared in minutes which makes best combination when paired with bread or palappam .


Ingredients
  • Potato - 1 Cubed
  • Onion - 1/2 ( thinly sliced)
  • Green Chilly - 4 (slit into 2)
  • Curry Leaves - few
  • Ginger - 1 tsp (chopped)
  • Curry leaves - few
  • Thin coconut milk - 1 cup
  • Thick coconut milk  - 1/2 cup
  • Water - 1 cup
  • Coconut Oil - 1 tsp
  • Salt - to taste


Method
  1. In a pressure cooker add potato, sliced onion, green chilly, ginger, curry leaves ,water, salt and cook for 1  whistle.
  2. When pressure is released, open lid and gently mash  half of the potatoes. The other half  should remain cubed. 
  3. Add thin coconut milk and bring to boil.
  4. Now reduce flame to low  and add thick coconut milk. Switch off and keep aside.
  5. Pour  1tsp coconut oil, few  curry leaves and some freshly chopped ginger juliennes over the curry.
  6. Tastes best with palappam ,appam, bread.
