Tres Leches Cake

             

            "Tres Leches Cake" - A deliciously rich, moist, authentic, Mexican cake. As the name indicates "Tres Leches" means "three milk". This soft fluffy vanilla cake is drenched  in a sweet three milk  mixture which is made from evaporated milk , condensed milk and whole milk. The light and wonderfully flavored  cake is then topped with mildly sweet whipped cream frosting and garnished with berries of your choice. Also this cake tastes best the next day.

Ingredients

For the cake

  1. All purpose flour  -1 cup
  2. Baking powder -1tsp
  3. Butter - 1 stick(nearly 110 gms)
  4. Milk 1/4 - 1/2 cup 
  5. Eggs - 3\2 whole + 1 egg  white only
  6. Vanilla essence - 1tbsp 
  7. Sugar-  3/4 cup (as I prefer less sweet)
  8. Salt - 1/4 tsp

For the 3 milk mixture

  1. Evaporated milk - 1 can (14 oz)
  2. Sweetened condensed milk - 1/2 can (7 0z)
  3. Whole Milk - 1/2 cup

For the topping

  1. Heavy whipping cream - 2 cup
  2. Sugar - 1/4 cup - 1/2 cup (according to sweetness)
  3. Vanilla Essence - 1tsp
  4. Strawberries
  5. Blackberries

Method

  1. Preheat  the oven at 350 F.
  2. Sieve all purpose flour , salt ,baking powder.  (dry ingredients)
  3. Beat eggs to ribbon stage with 1/4 cup sugar and vanilla essence.
  4. Beat butter and 1/2 cup sugar well in another bowl.
  5. Add the beaten egg mixture to this.
  6. Gently fold in the  dry ingredients in 3- 4 batches till everything gets blended well , adding desired quantity of  milk if needed if the batter is too tight. 
  7. Transfer to a greased parchment paper lined baking pan.(8 " round)
  8. Bake  at 350F for around  25 - 30 mins.(till a toothpick inserted in the center comes out clean).
  9. Meanwhile make  the "three milk mixture" of evaporated milk, condensed milk  and whole milk.
  10. Once  the cake is out from oven transfer  to a wire rack and let it cool a bit.
  11. Transfer the cake to a serving wide bowl and polk holes on the cake it with a toothpick.
  12. Generously  pour the 3 milk mixture onto it. Wait till the entire milk mixture is completely soaked by the cake.
  13. Chill in refrigerator for  minimum of about 3 hrs.
  14. Make the whipped cream frosting by beating heavy cream sugar and vanilla essence in a stand mixer with whisk attachment. Beat on high  until whipped.
  15.  Top the cake with whipped cream frosting and fruits of your choice.
  16.  Slice  and serve .
