Egg Puffs



        "Egg Puffs" - a hot selling bakery item of Kerala and a most popular evening snack that tastes best when paired with a hot cup of tea or  even chilled lemon juice. Puff pastry sheet is filled with a masala  made from caramelized onions with some spice powders, topped with hard boiled eggs, brushed with egg wash and baked to perfection. So if you haven't tried this just give a try and I'm sure you will love this.....!!!!1 

 Ingredients
  • Puff Pastry Sheet   8 nos
  • Eggs - 4 hard boiled ( de-shelled and cut into half)
  • Onion - 2 large
  • Ginger garlic paste -  1 tsp
  • Green chilli - 1 chopped
  • Curry leaves - few
  • Red chilli powder - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Pepper powder - 1/4 tsp
  • Garam masala Powder - 1/2 tsp
  • Water 2 tbsp
  • Salt - as needed
  • Oil - 2 tbsp
  • Egg  - 1   (for egg wash)

Method
  1.  In a  heated pan, add oil .
  2.  Add onion and saute till onion becomes brown.
  3. Add  ginger garlic paste,green chilly, curry leaves  and saute till  raw smell disappears.
  4. Add all powders, salt and mix well.
  5. Add 2 tbsp water and mix well. Allow this "masala filling" to cool completely.
  6. Take the puff pastry sheet ( cut to square shaped if it is a roll) and place required amount of " masala filling" inside  the centre of the square sheet.
  7. Place a half of hard boiled egg on top of the masala and gently fold the four corners and press the edges. 
  8. Place  all the filled  puffs on a lightly greased baking pan.
  9. Meanwhile beat 1 tbsp egg with 1 tbsp water to make an "egg wash" and apply on top of each puffs with a brush.
  10. Preheat the oven to 400F.
  11. Bake for 12- 15 minutes till the  puffs turns golden brown.Take out from oven and serve hot.






Notes
  1. Thaw the puff pastry sheets at least 20 minutes before you prepare puffs.
  2. The baking time varies and depends upon the type  puff pastry sheets used and the oven.Generally it takes around 10 to 15 minutes.
  3. If you are buying the puff pastry sheet roll, cut into desired size ,gently roll and use.
  4. Allow the filling to cool completely before stuffing on the pastry sheet else it will turn soggy
  5. Adding egg wash to the puffs gives a nice crispy txture and golden color to the puffs
