Pan Seared Salmon with Coconut Rice and Mango Avocado Salsa




Pan Seared Salmon

Ingredients

  1. Salmon fillet - 2 nos
  2. Sweet chilli Sauce-  2 tbsp
  3. Dijon Mustard sauce - 2 tsp
  4. Ginger garlic paste - 1/2 tsp
  5. Pepper Powder - 1 tsp
  6. Salt - as needed
  7. Garlic chopped - 1 tsp
  8. Ginger Chopped 1 tsp
  9. Butter - 2 tbsp



Method
  1. Clean and cut salmon to medium size pieces.
  2. Marinate Salmon with ingredients numbered 2 to 6.
  3. Heat a pan. Add  butter and saute finely chopped ginger and garlic till golden brown.
  4. Place the marinated salmon pieces on top of browned ginger and garlic.
  5. When one side is brown flip the other side and cook till other side is brown.
  6. Once done, brush little pepper mixed with butter on top.

Mango Avocado Salsa




Ingredients
  1. Mango -1 Ripe but firm
  2. Avocado - 1 ripe but firm
  3. Red bell pepper - 1 tbsp chopped
  4. Onion - 1 tbsp (chopped) 
  5. Coriander Leaves- few
  6. Jalapenos - 1 tsp chopped
  7. Salt - To Taste
  8. Olive Oil - 1 tsp
  9. Pepper Powder - 1/2 tsp
  10. Lemon juice - 1 tsp
  11. Honey 1 tsp
Method
  1. Clean and cut mangoes and avocados to small cubes.
  2. Mix all the ingredients in a bowl without getting mashed.
  3. Garnish with freshly chopped coriander leaves.


Coconut Rice

Ingredients
  1. Rice - 1 cup
  2. Water - 2 cup
  3. Coconut milk- 1/2 cup
  4. Butter - 1 tbsp
  5. Salt - as  needed
Method
  1. Clean and wash rice really well and drain.
  2. In a wide bottomed vessel boil water, along with coconut milk ,salt and butter.
  3. Add drained rice.
  4. Cover and cook till done.
  5. Gently fluff the rice and transfer to a bowl.
  6. Serve with salmon and mango avocado salsa.
