Chicken and Vegetable Stew Rice
"Chicken and Vegetable Stew Rice" is a simple and yummy rice recipe which includes alternative layers of rice and a stew which is made of chicken and vegetables and is a quick substitute for biryani. Any alternations to this dish can be made either by using chicken alone as Chicken Stew Rice or veggies alone (Veg Stew Rice - a dish that can be prepared for lent season ) or a combination of both which I have followed in this recipe .So instead of making the regular rice and curries, try this dish once and you will love it....!!!!
Ingredients for Preparing Rice
- Basmati rice -2 cup
- Boiling Water - 6 cup
- Salt
- Lemon juice - 1tbsp
Whole Spices
- Green cardamom - 4
- Cinnamon stick - 1
- Cloves - 3
Method
- Soak rice in water for half an hour and drain .
- To the heavy bottomed vessel add 6 cups water, salt and whole spices and bring to boil.
- Add rice to boiling water and cook until done.
- Drain and keep aside.
Ingredients for the Chicken and Vegetable Stew
- Chicken 500 gms
- Vegetables cubed- 1 cup (carrots, peas, potato)
- Onion - 1.5 cup sliced to small pieces
- Tomato -1/4 cup chopped
- Ginger- 1 tbsp crushed
- Garlic 1 tbsp crushed
- Garlic - 1 tbsp crushed
- Green chilly - 2 chopped
- Coriander Powder - 1 tsp
- Crushed Pepper powder - 1 1/2 tsp
- Garam Masala powder - 1 1/2 tsp
- Coriander Leaves - 2 tbsp chopped
- Salt - to taste
- Oil - 2 tbsp
- Green cardamom - 2
- Cinnamon stick - 1 small piece
- Cloves - 2
- Pearl Onions -4 sliced finely
- Butter - 1 tsp
- Water - 1/2 cup
- All Purpose flour - 1 tsp
- Thin coconut milk - 1 cup
- Thick coconut milk - 1/2 cup
Method for Preparing Chicken Stew

- Heat oil in a pan and splutter whole spices.
- Saute ginger garlic followed by onions and green chilli till translucent.
- Add 1/2 tsp garam masala, coriander powder and salt and add chicken piecec. Saute on high heat for 3 minutes
- Reduce the flame and add thin coconut milk
- Cover and cook till half done
- Now add chopped veggies and cover and cook till 3/4 th done
- Add chopped tomatoes and cover and cokk till everything is cooked well
- Meanwhile in another pan add 1 tsp butter and fry pearl onions till golden brown
- Reduce flame and add add all purpose flour and saute till light brown and a nice aroma comes.
- Add 1/2 cup water and stir well so as to make a thick sauce.
- Pour this over the cooked chicken and veggies and mix well.
- Lastly add thick coconut milk, freshly crushed pepper and garam masala powder.
- Mix everything well and add chopped coriander leaves and give a good stir.
- The chicken and veg stew is ready.
- In an oven safe bowl , layer the cooked rice and chicken stew in alternative layers.
- Cover with an aluminium foil and bake on a preheated oven (350 degree F) for 20 minutes
- Once done , fluff up the rice and chicken and serve hot.
Notes
- If you are not having an oven , you can the vessel on a wide tawa which is placed on the flame in very low heat for about 20 to 30 minutes.
- The same recipie can be done using chicken alone or veggies alone and is quick and easy substitute for biryani.
- The choice of veggies can be made to your chhoice like carrots,beans, cauliflower, potatoes or green peas.
