Nurukku Godambu Payasam (Broken Wheat Payasam)
Any feast of Kerala is incomplete without a "payasam". "Nurukku Godambu Payasam" is a special dessert made from broken wheat .It is also known as "sooji - godambu" in some places.The broken wheat is first cooked in water and then mixed with jaggery syrup.Then the coconut milk is added and spice powders such as cardamom(elakka podi) and dry ginger powder(chukku podi) are added . Finally coconut flakes, cashews and raisins are fried in ghee and poured over the dessert which enhances the flavor of this payasam . So if you haven't tried, just give a try and you will love it...!!!!
Ingredients

- Nurukku Godambu (Broken wheat) - 3/4 cup
- Water - 4 cup
- Thin Coconut milk - 2 cup
- Thick coconut milk - 1 cup
- Ghee - 2 tbsp
- Cashew nuts - 10 nos(cut into halves)
- Raisins - 2 tbsp
- Coconut flakes - 2 tbsp
- Jaggery syrup - 1.5 cup
- Cardamom powder - 1/4 tsp
- Dried Ginger Powder (Chukku podi ) - 1/4 tsp
- Jeera/Cumin Powder - 1 pinch
Method

- .Clean and wash broken wheat well.
- Transfer it to a pressure cooker and add water.
- Cook for 4 whistles in medium flame.
- When pressure is released , open the lid and add jaggery syrup and mix well till jaggery is well coated in broken wheat.
- Add jeera, cardamom and dried ginger powder and mix well.
- Add thin coconut milk and allow to boil.
- Reduce flame to low and add thick coconut milk and stir continuously.
- Switch off the flame and keep aside.
- In a heated pan add ghee. Fry coconut flakes followed by nuts and raisins.
- Pour over the payasam.
- Serve hot .
Notes

The color and sweetness of the payasam depends on the type of jaggery used.So please increase or decrease the amount of jaggery syrup used according to ones taste.
