Naadan Mutta Roast (Kerala Egg Roast)



Ingredients

  • Egg - 3 (hard -boiled)
  • Onion - 2 (finely sliced)
  • Garlic - 1 tsp (finely chopped )
  • Ginger - 1 tsp (finely chopped )
  • Green Chilli - 1
  • Turmeric powder -1 /4 tsp
  • Kashmiri Red Chilly powder - 11/2 tbsp
  • Garam Masala Powder - 1/4 tsp
  • Salt - To taste
  • Water 2 tbsp
  • Curry Leaves
  • Coconut Oil - 4 tbsp


Method

  1.  In a  heated kadai preferably an iron kadai, add oil .
  2. Add  choppped garlic , ginger and saute till a nice aroma comes.
  3.  Add onions, green chilly, curry leaves and saute till onion becomes brown.,  
  4. Add turmeric, chilly powders salt and mix well.
  5. Add  2tbsp water to prevent the masala from getting burnt and saute for 2 minutes till it appears dark brown in color. (if needed you can add very little water)
  6. Sprinkle garam masala powder on top.
  7. To this mixture, add  boiled egg. Cover the  pan and let it simmer for 2 mins
  8. Adding 1 tsp of coconut oil enhances the flavor.
  9. Tastes best with appam, idiyappam, puttu,chapathi , porotta etc.
