Fish Pulao






Ingredients

  1. Boneless fish - 2 fillet 
  2. Ginger garlic paste - 1/2 tsp
  3. Pepper Powder - 1/2 tsp
  4. Turmeric Powder - 1/2 tsp
  5.  Red Chilli powder - 1 tbsp
  6. Lemon juice - 1 tsp
  7. Salt - as needed
  8. Onion - 1  cup + 1/4 cup thinly sliced
  9. Green Chilli - 2 chopped
  10. Cashews - 10 nos 
  11. Cilantro - a handful
  12. Salt - to taste
  13. Oil- as needed for frying fish
  14. Ghee - 2 tbsp
  15. Basmati rice - 11/2 cup
  16. Water - as needed to cook rice
  17. Butter - 1 tbsp
  18. Cardamom - 3 pods
  19. Bay leaf - 1
  20. Peppercorns -  5 nos



Method
----------
  1. Clean and cut fish  fillet to small pieces and marinate with ingredients numbered 2  to 7.
  2. Cook the basmati rice with enough water, salt and keep aside.
  3. In a pan add  ghee and fry  1/4 cup onions till golden brown followed by cashews.
  4. Drain and keep them aside.
  5. In a pan add oil and shallow fry fish pieces. Drain and keep aside.
  6. In the same pan  add butter.Splutter cardomom, bay leaf and peppercorns.
  7.  Add sliced onions  and green chilli and saute till it gets light brown.
  8. Add  1/2 tsp turmeric powder  salt and saute well.
  9. Add cooked rice and mix well.
  10. Now add fried fish pieces and fresh chopped coriander leaves and mix gently without breaking fish pieces
  11. Garnish with fried onions and cashews
  12. Serve with salad, pappad and pickle.
