Pathiri / Ari Pathiri







Ingredients

  • Rice flour (Pathiri podi) -  1 cup
  • Water  - 1 cup +  3 tbsp
  • Oil- 1 tsp
  • Salt - To taste



Method

  1. In a wide mouthed pan add 1 cup water along with salt and oil and bring to boil.
  2. When water is boiled , reduce heat and add rice flour little by little and mix gently with a spatula.
  3. Close the lid and remove from fire and keep aside for 5 mins.
  4. After 5 mins open the lid and transfer the dough to a wide mouthed vessel and kneed the dough well so as to make a very smooth dough.It may take 5-8 mins.(if you want you can add 1/2 tsp of oil while kneeding the dough and transfer to a closed pan like caserole which holds heat.
  5. Now make small lemon sized balls.
  6. Flatten each balls and dust in rice powder and roll to form avery thin pathiri.
  7. Heat a non stick pan , and place the rolled pathiri.
  8. When you see tiny white spots on one side ,gently flip the pathiri.(no need to add any oil)
  9. press gently with a spatula and you can see the pathiri getting puffed up.
  10. When both sides are cooked, transfer to a container.
  11. Serve with any veg or non veg curry.
