Pathiri / Ari Pathiri
Ingredients

- Rice flour (Pathiri podi) - 1 cup
- Water - 1 cup + 3 tbsp
- Oil- 1 tsp
- Salt - To taste
Method

- In a wide mouthed pan add 1 cup water along with salt and oil and bring to boil.
- When water is boiled , reduce heat and add rice flour little by little and mix gently with a spatula.
- Close the lid and remove from fire and keep aside for 5 mins.
- After 5 mins open the lid and transfer the dough to a wide mouthed vessel and kneed the dough well so as to make a very smooth dough.It may take 5-8 mins.(if you want you can add 1/2 tsp of oil while kneeding the dough and transfer to a closed pan like caserole which holds heat.
- Now make small lemon sized balls.
- Flatten each balls and dust in rice powder and roll to form avery thin pathiri.
- Heat a non stick pan , and place the rolled pathiri.
- When you see tiny white spots on one side ,gently flip the pathiri.(no need to add any oil)
- press gently with a spatula and you can see the pathiri getting puffed up.
- When both sides are cooked, transfer to a container.
- Serve with any veg or non veg curry.
