Beef Stew (Kerala Style)
A simple and classic Kerala recipe of beef cooked in coconut milk along with potatoes and carrots and also spices like cardamom, pepper and cloves .It is a common Christian dish that is served along with palappam, bread, chapati and idiyappam.
Ingredients
- Beef - 500 gm
- Onion -1 small ( thinly slice)
- Green Chilly - 4 (slit into 2)
- Curry Leaves - few
- Ginger - 1 tbsp(chopped)
- Garlic -1 tsp (chopped)
- Potato Cubed - 1/2 cup
- Carrot Cubed - 1/4 cup
- Coriander Powder - 1 tsp
- Garam Masala Powder -1/4 tsp
- Cloves - 2
- Cardamom - 3
- Thin coconut milk - 11/2 cup
- Thick coconut milk - 3/4 cup
- Water - 1/4 cup
- Lemon juice/Vinegar -1 tsp
- Coconut Oil - 2 tbsp
- Salt - to taste
- Crushed Pepper - 1 tsp
- Cashew Paste - 2 tbsp
To Marinate
- Pepper Powder - 1/2 tsp
- Coriander Powder - 1 tsp
- Garam Masala Powder - 1/4 tsp
- Salt - 2 tsp
- Ginger garlic Paste - 1 tsp
Method
- Marinate beef with ingredients in "To Marinate" section and keep for 30 mins.
- In a pressure cooker add oil.
- Add whole spices and saute for a while.
- Add sliced onion, green chilly,ginger garlic, curry leaves saute till onion becomes translucent.
- Add coriander powder, garam masala and salt and saute till raw smell disappears.
- Add marinated beef pieces and saute for 2 mins
- Add 1/4 cup water and cook for 4 whistles on med heat.
- Once pressure is released open the lid and add cubed potato, carrot and cook for 1 more whistle.
- Open lid and add thin coconut milk and bring to boil.
- Add cashew paste and mix well.
- Now reduce heat to low and add thick coconut milk.
- Remove from fire and add 1 tsp lemon juice/vinegar and crushed pepper .
- Add 1 tsp oil and curry leaves at top.
- Tastes best with bread,chapati and palappam.
- Coconut Oil gives the best taste to this dish.
- You can also use canned coconut milk in this recipe.
